Handmade using Cambridge Gages from Gloucestershire. Fully ripened on the tree for the best flavour, minimal sugar is added because we capture all the natural sublime sweetness of these rare fruits.
Serving Suggestion: Greengage and Ginger Fool
- 50ml B&G Greengage Liqueur
- 400g greengages
- 1 medium piece of grated ginger
- zest of 1 unwaxed lemon
- 70ml water
- 250g caster sugar
- 300ml double cream
Halve the greengages (keeping some back for garnish), removing stone and place in a saucepan along with the grated ginger, lemon zest, sugar and water. Heat on a low-to-medium heat, stirring occasionally, until the sugar has dissolved and the fruit is soft (about 10 minutes). Remove from the heat and allow to cool before placing in the fridge to chill. When ready to serve whip the cream with the greengage liqueur and then layer on top of the greengages. Garnish with crystallised ginger and slices of greengage.
